Salad benefits

Since I am a big nerd and wanted to recap on my nutrition class, I looked up some of the nutritional benefits of some of the ingredients of the broccoli salad on www.wikipedia.org.

Broccoli:
It is high in vitamin C and soluble fiber and contains the multiple nutrients with potent anti-cancer properties including diindolylmethane and selenium. The 3,3'-Diindolylmethane found in broccoli is a potent modulator of the innate immune response system with anti-viral, anti-bacterial and anti-cancer activity.[10] [11] Broccoli also contains the compound glucoraphanin, which can be processed into an anticancer compound sulforaphane, though the benefits of broccoli is reduced if the vegetable is boiled.[12] A high intake of broccoli has been found to reduce the risk of aggressive prostate cancer.

Craisins:

Cranberries are good for you. Not only do they provide antioxidant vitamins and flavonoids, but they also have an anti-adhesion quality that keeps certain bacteria from sticking to cells in the urinary tract, the mouth and stomach. Cranberries are known to reduce the occurrence of urinary tract infections.

A third of a cup of Craisins provides the same health benefits as 8 ounces of Cranberry Juice Cocktail.

Sunflower Seeds:

In addition to linoleic acid (an essential fatty acid), sunflower seeds are also an excellent source of dietary fiber, protein, Vitamin E, B Vitamins, and minerals such as magnesium, iron, phosphorus, selenium and zinc.[6] Additionally, they are rich in cholesterol-lowering phytosterols.[7] They are also a good source of calories
