Sloppy Joe's

1 Pound Ground Beef
1 Can Chicken Gumbo Soup
1 Small Can Enchilada Sauce
1 TBS Ketchup
1 tsp Mustard
1/4 tsp Minced Garlic

Brown the ground beef, season with salt and pepper. When cooked drain off the grease and add the remaining ingredients. Simmer for 30 minutes to 1 hour depending on how think you like your Joe's. This recipe can be refrigerated and reheated for later or I have made extras and frozen some for the next months menu.

Mountain Man Pancakes

In a blender, liquify for 4 min: 1 1/2 cups buttermilk and 3/4 cup whole wheat kernels.

Then add to that 3 heaping tbs corn meal, 1 heaping tbs brown sugar, 2 eggs, and 1/2 stick of butter cut into small pieces. Liquify that for another 30 seconds.

Add 1 heaping tbs of baking powder and a scant 1/2 tbs of baking soda.

Pulse blender.

Let the ingredients rise to the top of the blender, then pour on your griddle and cook like regular pancakes.

Callie's Note: Don't have buttermilk? Mix 1 cup milk and 1 TBS vinegar or lemon juice. (for this recipe you'll need to double this and then toss the extras.)

PB and J Muffins

1 Cup Flour
3/4 Cup Whole Wheat Flour
1/4 Cup Sugar
!/4 Cup Brown Sugar
1 TB Baking Powder
1/2 Tsp Salt
1/3 Cup Creamy Peanut Butter
1 Egg
2 TBS Butter
1 Tsp Vanilla Extract
1/4 Cup of your favorite Jam

Preheat oven to 400 degrees. Combine flour, sugars, baking powder and salt in a large bowl. Whisk in milk,
peanut butter, egg, butter and vanilla.
Spoon batter into 12 muffins cups, filling them only half way. Spoon 1 teaspoon jam into each cup, then poor batter on top to cover the jam.
Bake for 20 min or until muffins spring back when touched lightly in the center.
Let cool in pan for at least 5 minutes.

Brownies

1/2 Cup butter melted
1 Cup sugar
1 tsp Vanilla
2 eggs
1/2 cup flour
1/3 cup cocoa
1/4 tsp Baking powder
1/4 tsp salt
optional 1/2 cup nuts
mix ins welcome (Andes mints, M&Ms etc.)

Preheat the oven to 350 degrees.
melt butter in bowl then add sugar vanilla and eggs mix. Then add
dry ingredients, mix well.
Bake in an 8 inch pan for about 20-25 min and still are a
little fudgey when you put the toothpick in.

Suzanne's Comment: I just barely got this recipe from my sister-in-law who graduated in Culinary Arts. It is sooo simple and I was surprized how delicious they are. I was impressed how much better then boxed brownies they tasted.
