Japanese Ramen Noodle Soup
serves about 4-5 people
You will need three pots for this recipe. A small saucepan to boil eggs, a medium saucepan to cook chicken and make broth, and a pot to boil noodles in
2 chicken breasts, seasoned with mrs. dash or garlic power and salt and pepper
1.5 cups spinach
9 oz of fresh ramen noodles or other similar noodles (I found these by the won ton wrappers, mine said chinese noodles on the package)
2 hard boiled eggs
3 garlic cloves, divided (2 for broth and one for the chicken)
2 tablespoons of olive oil
2 tablespoons of sesame oil
For the Stock:
3 cups chicken broth
1/4 cup reduced sodium soy sauce
1 tsp. worsterchire sauce
1/4-1/2 tsp. chinese five spice (depends on how strong you want the flavor.
1 tsp. sugar
2 sliced of ginger
2 garlic cloves, sliced
For garnish:
Green onion, chopped
sesame seeds
- In a small sauce pan put eggs in and cover with water. Bring to a rolling boil. Boil for one minute. Cover and turn off burner. Let eggs sit on stove for 15 minutes. This will hard boil perfectly without overcooking them.
- Heat water in a pot for boiling noodles. While waiting for water to boil start cooking the chicken in step 3.
- Heat 2 tablespoons of olive oil in a medium saucepan cook chicken on both sides until cooked through.
- Mince one clove of garlic and add to chicken in pot last 30 seconds of cooking.
- Remove chicken and garlic from pot and place in a bowl to rest. Drizzle 2 tablespoons of sesame oil over chicken so it can absorb the flavor while it is resting.
- In the same medium saucepan that the chicken was cooked in we will make the broth.
- Pour all of the Stock ingredients into the medium saucepan and heat over medium heat. Lightly boil for 5 minutes.
- Boil Noodles in boiling water for 3-4 minutes until done according to directions on package.
- Serve the soup by ladling desired amount of noodles in each bowl. Then pour broth over the noodles and stir in 1/4 cup of fresh spinach in each bowl. Garnish with pieces of sliced chicken, 1/2 boiled egg, green onions.
